Make breakfast the star of the show this holiday season with Gluten Free Eggnog Stuffed French Toast made with Canyon Bakehouse Cinnamon Raisin Bread!

For the Toast:
8 slices Canyon Bakehouse Cinnamon Raisin Bread
2 tbsp Butter

For the Filling:
4oz Cream Cheese
1 cup Powdered Sugar
2 tbsp Egg Nog
¼ tsp Nutmeg
1 tsp Vanilla Bean Paste
Dash of sea salt

For the Dredge:
2 Eggs
½ cup Eggnog
¼ tsp Nutmeg
1 tsp Cinnamon

1. Beat cream cheese, powdered sugar, eggnog, nutmeg, vanilla, and a pinch of salt until smooth.
2. Spread the filling onto 4 slices of Canyon Bakehouse cinnamon raisin bread and top with the remaining 4 slices to make sandwiches.
3. Whisk together eggs, eggnog, nutmeg, and cinnamon for the dredge.
4. Dip each stuffed sandwich into the dredge, coating both sides.
5. Melt 2 tbsp butter in a skillet over medium heat and cook each sandwich until golden and the filling is warm and melty.
6. Slice, dust with powdered sugar, and enjoy!

Having a newborn = having coffee on the brain 24/7 so I figured I’d share one of my favorite cold brew + cold foam recipes! While I’m not dairy free, @nutpods makes some of my favorite creamers & I always have a bottle in my fridge!

one week of our sweet baby boy!

My labor experience was truly so positive and full of joy! I was in denial that I was in labor since it meant he was 10 days early, but Titus had his own plans for us!

Labor was about 12 hours start to finish and we spent only about 4 hours of that in the hospital because it all happened so fast! A cervical check after the epidural showed I was 9cm and it broke my water — he was here 40 minutes later!

Getting the epidural allowed me to be so present when pushing and I was joyful and laughing through the process!

Now we’ve had a whole extra week of snuggles with the most perfect boy and we’re just so in love!

My labor experience was truly so positive and full of joy! I was in denial that I was in labor since it meant he was 10 days early, but Titus had his own plans for us!

Labor was about 12 hours start to finish and we spent only about 4 hours of that in the hospital because it all happened so fast! A cervical check after the epidural showed I was 9cm and it broke my water — he was here 40 minutes later!

Getting the epidural allowed me to be so present when pushing and I was joyful and laughing through the process!

Now we’ve had a whole extra week of snuggles with the most perfect boy and we’re just so in love!

We’re in the home stretch!!!

Breakfast is staying steady with some sort of protein packed egg scramble & gluten free Carbonaut toast!

Lunch is usually a bowl of leftovers with leafy greens, protein, and high-fiber carbs!

Dinner here was a Thai peanut chicken dish with brown rice noodles & it might be the best thing I’ve made since finding out I have gestational diabetes!

I have to be careful with dates because of the carb/sugar content but if I pair them with a high protein meal then im all good to go!
